
(C) And Then All I Thought About Was You
I made this for Mr L’s Mum’s birthday. It was a real lets just put it together and see what we come up with cake. We had lots of oranges in the house and I thought that it would be a nice cake to make. Do you know what it turned out lovely!
So here is the recipe for you.
FOR THE CAKE:
140g/5oz softened butter or margarine, I always use margarine have to say.
140g/5oz of caster sugar
3 eggs
125g/4.5oz of self-raising flour
2 medium oranges for the juice
FOR THE ORANGES
4 oranges
70g/2.5oz margarine
70g/2.5oz caster sugar
I had an 8.5inch cake tin to work with.
- Preheat the to 180C (Sorry not sure what this is in gas)
- I didn’t bother to peel the oranges this time, although you can do and I probably would for the next cake. Cut the 4 oranges into thin slices, taking out any pips.
- Melt the butter and in a pan and add the sugar allowing the sugar to melt and the mixture to reduce slightly.
- Add the orange slices and stir to coat in the sugary mixture, let the oranges become almost glistening but don’t let them become carmelised.
- Butter your cake tin to prevent sticking.
- Remove the oranges from the pan, and arrange them in the cake tin, so that they cover the whole tin. Pour over any remaining mixture from the pan.
- Put the flour sugar, margarine, eggs and the juice from the two oranges into a food mixer and whizz until smooth and blended.
- Spoon the cake mixture over the oranges, and spread evenly.
- Bake in the over for 30 -40 minutes until the mixture is cooked throughout.
- Once removed from the oven, place a plate on top of the cake tin and flip the tin onto the cake.
This cake can be served hot or cold, on its own, with cream or ice cream.
It was a massive hit in Mr L’s Mum’s house the other day and it is something we will be making again that is for sure!
