I found this recipe for a Caribbean beef stew for the slow cooker and thought that it looked pretty yummy. However I didn’t have all the ingredients this morning and wasn’t dressed when I was doing the cooking, so I was not going down town to buy them. So I tweaked the recipe to the ingredients that I had! But it turned out quite well…
INGREDIENTS:
Braising Steak (I used the whole pack and just put the pieces in as they were)
Diced Butternut Squash (ours was a relatively small squash)
1 Onion chopped
1 Red Pepper deseeded and chopped
2 Garlic Cloves, finally chopped
1 Can of Baked Beans
225ml / 8fl oz of Beef Stock
Salt and Pepper to taste
METHOD:
Chop all of the vegetables and put into a frying pan and fry them all for 4-5 minutes so that they start to get soft and put into the slow cooker.
Take off any visible fat from the beef and place into the frying pan. Frying for a few minutes until the meat is browned off. Add to the slow cooker.
Add the Baked Beans to the slow cooker, and make up the beef stock and add to the slow cooker.
Mix up all the ingredients in the slow cooker and put the slow cooker on high for 7 and a half hours.
Serve with some bread.
This was a gorgeous dish and one that I will be making again. I think it is the best stew so far that I have made in the slow cooker and was eaten quickly by all of us. This recipe was enough for all three of us, but you may need to double up for larger families.

We just got a slow cooker for Christmas and I’m really lookign forward to trying it out! Shall keep this one for when I’m a bit more confident!! xx

They are so easy to use I love mine, the best has to be mince and dumplings. But I have done sausages and lots and lots of stews in them. My next thing is going to be cola ham really want to do that. You should go over to The Moiderer’s blog though there are loads of recipes over there, that is where I started with mine. xx
